Tonight the usual winter fare just wasn’t cutting it. Maybe it was the fact that I planted my first batch of tomatoes after work this evening, so excited! I still have a few jars of canned crushed tomatoes and some frozen tatume squash, so I whipped up a super-easy family favorite.
For the sauce …
Cook onions and garlic until soft. Then add in crushed tomatoes, 1 small jar of tomato paste ,and zucchini, fresh would be fine here too, I would just slice it a little thinner so it cooks through. Also add salt, pepper, and any other seasoning you would like. Cook on medium heat for 15 minutes or so, until the sauce thickens up.
Slice kielbasa type sausage, I had some Venison Garlic on hand. Cook on med-high heat until both sides are crisp and sausage is heated through.
Cook up your favorite pasta or rice and combine.
I have one quart jar of tomatoes left from last summer. I’ve been trying to decide what to make with it and this sounds very good. I’m planning to put up lots more tomatoes this year. First, I need to get them planted though. The poor plants are outgrowing their containers, but my new garden is flooded from the recent rains. Life’s little ironies 🙂

Love reading your food blogging posts. I don’t have any tomatoes left but I am so ready to put those I’ve bought into the garden. I think I will wait a little longer. I didn’t plant seeds this winter – and now I’m wishing I had. I do have the planting bug, though!
I didn’t do seeds this year either. I just decided that it didn’t sound fun, and I’m trying to lower the amount of things that I just don’t care to do in regards to gardening 🙂 Stopped by NG on my way home from work today and bought 10 more 🙂
I bought a bunch at HD today (ssshhhh – don’t tell). But I want to put some row cover around their cages for a while. It gets incredibly windy here and it’s still risky for them in my garden.
